Apple Spice Pudding - cooking recipe

Ingredients
    2 c. skimmed milk
    1 envelope (four 1/2-c. servings) reduced-calorie vanilla instant pudding mix
    1/3 c. apple juice (unsweetened)
    1 tsp. each: brown sugar and lemon juice
    1/2 tsp. cinnamon
    1/2 lb. apples, pared and minced
    2 Tbsp. golden raisins
    1/4 c. thawed frozen dairy whipped topping
    ground nutmeg
Preparation
    Prepare pudding with milk according to directions; set aside. In nonstick skillet, combine
    apple juice, sugar, lemon juice and cinnamon and bring to a boil.
    Add apples and raisins and cook until tender.
    Stir frequently until juice is reduced, 2 to 3 minutes.
    Add to pudding.
    Stir.
    Divide into 4 servings and cover until set.
    To serve, top each cup with 1 tablespoon of whipped topping and nutmeg.
    Serves 4.
