Southern Hush Puppies - cooking recipe

Ingredients

2 c. corn meal
1 Tbsp. flour
1 tsp. baking powder
1 tsp. soda
2 tsp. salt
1 c. buttermilk
1 egg, slightly beaten
2 Tbsp. onion, finely chopped
salad oil or shortening

Preparation

Combine dry ingredients.
Add buttermilk, egg and onion; stir well.
Carefully drop batter by tablespoon into deep hot oil. Cook only a few at a time, turning once.
Fry only until golden brown; drain well on absorbent paper.
Makes 2 1/2 dozen.
If using electric skillet, oil should be 370\u00b0.
