Cauliflower Soup - cooking recipe

Ingredients
    1 medium onion, chopped
    1 Tbsp. margarine
    1 medium head cauliflower
    1 carrot, grated
    3 c. chicken broth
    1 c. water
    1 c. milk
    1/4 tsp. nutmeg
    1/8 tsp. pepper
Preparation
    In large saucepan, combine onion and margarine and cook, stirring until onion is tender.
    Cut cauliflower into florets. Add to pan with carrot, broth and water.
    Cover and cook until cauliflower is tender.
    Cool slightly, then puree in blender or food processor.
    Return to pan. Stir in milk and seasonings. Reheat.
    Makes 6 servings.
