Chicken Cacciatore - cooking recipe

Ingredients
    3 lb. (1) broiler fryer, cut up
    3 Tbsp. olive or vegetable oil
    1 large onion, sliced
    3 cloves garlic, minced
    1/2 lb. mushrooms, sliced
    1 large can tomatoes
    1 1/2 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. oregano, basil or Italian seasoning
    1 (8 oz.) can tomato puree or sauce
    1 sweet green pepper, seeded and sliced
Preparation
    Heat oil in Dutch oven or large kettle.
    Brown chicken, part at a time; remove and keep warm.
    Pour off all but 1 tablespoon of oil.
    Add onion, garlic and mushrooms; cook 1 minute.
    Add tomatoes, sauce, salt and pepper and other seasonings.
    Add 1 cup of water or rinse sauce can by filling with water and adding to pot.
    Cook for 1 minute.
    Return chicken to pot; simmer over low heat for 1 hour or until chicken is tender.
    Add green pepper. Cook several minutes.
    Makes 4 servings.
    If you want to make 6 servings, increase vegetables.
    Great for a main dish.
