Brendan'S Nana'S Sausage Soup - cooking recipe

Ingredients
    1/2 small onion, diced into 1/4-inch pieces
    6 small or 1 1/2 lb. sweet Italian sausage
    14 c. beef or chicken broth
    1 c. white rice
    2 c. chunky Italian plum tomatoes (fresh or canned)
    1/4 lb. spinach, cleaned, de-stemmed and torn
    2/3 c. shredded Mozzarella cheese
Preparation
    Break sausage into 1/2-inch pieces.
    Put in large soup pot (2-gallon) with sliced onions.
    Saute sausage and onion (no oil or butter).
    Sausage will release oil when heated.
    Saute until golden brown over low heat.
    Don't burn the onion.
