Lite Rice Pudding - cooking recipe

Ingredients
    1 c. white rice
    1 qt. skim milk
    1 stick cinnamon
    1 tsp. vanilla
    zest of 1/2 lemon
    3/4 c. sugar
    ground cinnamon
Preparation
    In a 3-quart saucepan, add cold water to rice (enough to cover).
    Boil for 5 minutes.
    Drain rice and rinse under cool water in strainer.
    Return rice to saucepan and add 1 quart hot milk, lemon zest, cinnamon stick and vanilla.
    Simmer for 10 minutes.
    Add sugar.
    Stir and simmer for 10 more minutes.
    Pour into serving container and let cool.
    Sprinkle with cinnamon and serve.
