Morning Glory Muffins - cooking recipe

Ingredients
    2 1/2 c. sugar
    4 c. flour
    4 tsp. baking soda
    4 tsp. cinnamon
    1 tsp. salt
    4 c. grated carrots
    1 c. raisins
    1 c. chopped pecans
    1 c. coconut
    2 apples, peeled and grated
    6 large eggs
    2 c. vegetable oil
    4 tsp. vanilla
Preparation
    Sift together dry ingredients.
    Stir in carrots, raisins, pecans, coconut and apples.
    In a separate bowl, beat eggs with oil and vanilla. Stir into dry ingredients until just combined. Spoon into well buttered (1/3 cup) muffin tins, filling to the top.
    Bake at 350\u00b0 for 35 minutes or until springy to the touch.
