Ingredients

6 medium potatoes
2 eggs, beaten
1 Tbsp. grated onion
1/4 c. flour
1 tsp. salt
pinch of pepper
Preparation

Peel potatoes; grate or run through fine food chopper.
Add remaining ingredients and mix.
Heat oil in a skillet.
Spoon batter into skillet until brown on one side, then flip over and brown on other side.
Drain on paper towel and serve hot.
Amount of flour will vary with the water content of potatoes.
