Red Kidney Beans And Rice - cooking recipe

Ingredients
    1 lb. dried kidney or other red beans
    6 c. or more water
    1 large onion, chopped
    4 c. hot, cooked rice
    1/4 c. minced celery with some leaves
    1/4 c. fresh parsley, minced
    1 clove garlic, chopped
Preparation
    Soak the beans overnight or bring to a boil and soak for 1 hour.
    Drain; place in large pot with water to cover and simmer, covered, for 1/2 hour.
    Add seasonings and cook until beans are soft, about 1 1/2 hours.
    Serve with hot rice.
    Serves 5 or 6 people.
