Low-Fat Broccoli Soup - cooking recipe

Ingredients
    1 medium bunch broccoli
    4 c. water
    1 c. chopped onion
    1 c. 2% or skim milk
    3 Tbsp. margarine
    4 Tbsp. flour
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. milk
    4 chicken bouillon cubes
    6 small broccoli flowerets, cooked and drained (optional)
    finely diced red sweet pepper (optional)
Preparation
    Peel thick stalks of broccoli; chop stalks and heads (about 4 cups).
    In 3-quart saucepan, bring water to a boil.
    Add broccoli and onion.
    Cook, uncovered, just until tender.
    Drain, reserving 2 cups liquid.
    In blender, place broccoli mixture and milk. Cover and blend until smooth; set aside.
