Ratatouille - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1/2 c. chopped onion
1 tsp. minced garlic
3 Tbsp. parsley
1/2 small can tomato paste
4 medium tomatoes, chopped
1 medium eggplant, cut in 1/4-inch slices
2 small zucchini, cut in 1/4 inch slices
1 large green pepper, cut into strips
1/4 tsp. pepper
1 tsp. salt
1 tsp. basil
1/2 tsp. thyme
3 tsp. sugar
Preparation

In large pot, heat oil over moderate heat.
Add onion and garlic and cook until onion is light brown.
Add remaining ingredients.
Cover and cook over low heat for 45 minutes, stirring occasionally until vegetables are tender and some liquid remains.
Top with 1/2 cup of grated Parmesan cheese.
