Sweet Potato Souffle - cooking recipe

Ingredients
    3 lb. sweet potatoes, peeled, cooked and mashed
    2 eggs
    3/4 c. brown sugar
    1/2 c. melted butter
    1 tsp. cinnamon
    1 tsp. salt
    1 c. orange juice (use only enough to moisten mixture)
    1/2 to 1 c. pecans or walnuts, chopped
Preparation
    Add eggs to mashed sweet potatoes and blend well with hand mixer.
    Add 1/4 cup brown sugar, 1/4 cup butter, salt and cinnamon; blend with mixer.
    Add some orange juice, if mixture is dry and pasty, to moisten.
    Smooth out mixture in casserole dish. Top with nuts and remaining brown sugar (may not need all of brown sugar), then drizzle top with remaining melted butter.
    Bake at 325\u00b0 for 20 minutes.
