Watermelon Sweet Pickles - cooking recipe
Ingredients

8 lb. watermelon rinds
4 lb. sugar
1/2 c. pickle spices
salt
1 qt. vinegar
Preparation

Use thick rind, pare and remove any red part.
Cut in 1-inch cubes.
Use 1/4 cup salt to 1 quart water to make solution.
Add enough water to cover rind.
Let stand overnight.
Drain.
Cover with boiling water and boil until rind is tender, but not soft.
