Chicken And Dumplings - cooking recipe
Ingredients

4 large chicken breasts or 1/2 hen
1 large or 2 small eggs
1 1/4 c. water
6 drops yellow food coloring
White Lily flour
Preparation

Cook chicken or hen until done in seasoned water.
Remove from broth.
Have White Lily sifted in large bowl or pan.
Make well in flour.
Beat egg(s) well, then add water and food coloring.
Pour into well in flour and knead until stiff.
Roll thin and cut in small pieces.
Drop into chicken broth which should be boiling rapidly.
(Lower heat while you are rolling dumplings, then turn heat up when you start adding dumplings.)
Cook until dumplings are tender (do not overcook).
Remove chicken from bone and add to dumplings.
