Sweet Potato Balls - cooking recipe

Ingredients
    6 medium-sized sweet potatoes
    1/4 c. butter, melted
    1 tsp. salt
    1 egg, slightly beaten
    1 c. crushed, drained pineapple
    1/2 c. chopped pecans
    3 Tbsp. brown sugar
    dash of nutmeg and cinnamon
    1 c. flaked coconut
    large marshmallows (optional)
Preparation
    Boil, peel and mash sweet potatoes.
    Add butter, salt, egg, pineapple and pecans; whip lightly.
    Mix in spices and brown sugar.
    Roll into balls and press marshmallow into the center of each ball with thumb.
    Close the opening and roll in coconut. Bake in buttered baking dish at 400\u00b0 until balls are slightly brown.
    Makes about 12 servings.
