Cucumber Mousse - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1 1/2 c. chicken broth, divided
    1 Tbsp. lemon juice
    1 tsp. prepared horseradish
    3/4 c. shredded unpeeled cucumber
    1/2 c. reduced calorie mayonnaise
    1/4 c. sliced green onions
    1 (12 oz.) container 1% low-fat cottage cheese
Preparation
    Sprinkle gelatin over 1/2 cup chicken broth in a small saucepan; let stand 1 minute.
    Cook over medium heat until gelatin dissolves, stirring constantly, remove from heat.
    Add remaining 1 cup chicken broth, lemon juice and horseradish.
    Chill until consistency of egg white.
    Stir in cucumber and next 3 ingredients; spoon into a 4-cup mold coated with vegetable cooking spray.
    Cover and chill.
