Chicken Simon And Garfunkel - cooking recipe

Ingredients
    4 boneless chicken breasts
    1/4 c. melted butter
    Salt and pepper to taste
    4 slices mozzarella cheese
    1 egg, beaten
    2 Tbsp. water
    Flour
    Breadcrumbs
    1/2 c. melted butter
    1 Tbsp. parsley
    1/4 tsp. sage
    1/4 tsp. rosemary
    1/4 tsp. thyme
    1/2 c. sherry
    Toothpicks
Preparation
    Preheat oven to 350\u00b0. Pound chicken breasts until thin. Brush with butter, then sprinkle with salt and pepper. Lay chicken breasts on cheese slices and roll up (cheese on the outside). Combine egg and water. Roll chicken in some flour, then egg, then breadcrumbs. Fasten with toothpicks. Evenly space in a baking dish. Combine 1/2 cup melted butter and seasonings. Drizzle over chicken. Bake 30 minutes. Pour sherry over chicken and bake 30 more minutes. Serves 4.
