Nantucket Scallop Chowder - cooking recipe

Ingredients
    4 Tbsp. butter
    2 small onions, sliced
    1 c. diced potatoes
    4 c. milk, scalded
    common crackers, split and toasted
    2 c. boiling water
    1 pt. scallops, cut in pieces
    salt and pepper to taste
Preparation
    Melt butter.
    Lightly brown onions in butter.
    Remove onions. Cook scallops in butter 5 minutes.
    Add boiling water, onions and potatoes; simmer 15 minutes more.
    Season to taste.
    Serve hot with crackers.
    Serves 5.
