Black Bean Salad - cooking recipe
Ingredients

1 Tbsp. lemon juice
1 tsp. grated lemon peel
1 tsp. sherry vinegar
1/2 tsp. salt
1 clove garlic, chopped
1/2 tsp. cumin seed
1/2 tsp. coriander seed
1/4 tsp. paprika
6 Tbsp. olive oil
1 Tbsp. mint leaves, chopped
1 Tbsp. or more cilantro, chopped
1 jalapeno pepper, seeded and chopped
1/2 c. red pepper, chopped
1/2 c. yellow pepper, chopped
1/2 c. green pepper, chopped
1 small red onion, chopped
1 stalk celery, chopped
Progresso black beans, quickly heated and drained
Preparation

Mix all the ingredients together.
Refrigerate.
Good the first day, even better the second.
