Fried Ice Cream - cooking recipe

Ingredients
    1 qt. vanilla ice cream
    2 c. vanilla wafer crumbs
    1 c. flaked coconut
    2 eggs
Preparation
    With scoop, form 6 ice cream balls. Place on waxed paper lined tray. Cover and freeze several hours or until firm.
    In medium mixing bowl, combine vanilla wafer crumbs and coconut.
    Set aside. In a small mixing bowl, beat eggs.
    Coat ice cream balls with crumb mixture, pressing firmly into ice cream.
    Dip balls in beaten eggs.
    Coat again with crumb mixture.
    Place on waxed paper lined tray. Freeze for 2 hours or until very firm.
    Just before serving, heat 2-inches of oil in frying pan or deep fryer to 375\u00b0. Remove 2 balls at a time from freezer.
    Fry in hot fat 20 to 25 seconds or until browned. Drain. Serve immediately with honey or chocolate sauce.
    Makes 6 servings.
