Moo Shu Pork - cooking recipe

Ingredients
    1/2 lb. boneless pork, thinly sliced
    2 Tbsp. soy sauce
    2 slices fresh ginger root
    3 or 4 black mushrooms, soaked
    2 eggs, slightly beaten
    4 Tbsp. oil
    2 green onions, shredded
    1/4 c. chicken broth
Preparation
    Marinate pork with soy sauce, cornstarch and ginger root.
    Set aside. In preheated skillet, put 2 tablespoons oil.
    Scramble eggs to make thin omelet.
    Cool and cut into thin strips. Set aside. Add additional 2 tablespoons oil to skillet and brown pork. Stir-fry for 1 minute. Add sliced mushrooms and cook 2 minutes. Add chicken broth and seasonings. Thicken slightly with cornstarch. Transfer to platter.
    Add egg strips and shredded green onions.
