Pepper Relish - cooking recipe

Ingredients
    12 large peppers (red or green), 9 c. chopped
    6 tomatoes, peeled and chopped
    2 large onions, chopped
    3 Tbsp. salt
    3 c. sugar
    1 c. cider vinegar
    2 Tbsp. pickle spice
Preparation
    Halve, seed and chop peppers with coarse knife in food chopper. Add salt and let stand 3 to 4 hours.
    Drain well.
    Add other vegetables in large enamel or stainless kettle.
    Add sugar, vinegar and spices in a cloth bag.
    Bring to boil.
    Simmer 30 minutes.
    Place in sterile jars.
    Process 10 minutes in boiling water.
    Seal.
