Sweet Potato Yeast Rolls - cooking recipe
Ingredients

1 1/2 to 2 c. cooked mashed potatoes
1 c. milk
1/2 c. margarine
1/2 c. sugar
1 1/2 tsp. salt
1 pkg. yeast
2 beaten eggs
1 1/2 qt. flour (more if needed)
Preparation

Heat just warm the milk, sugar, shortening and salt.
Add cooled sweet potatoes.
Sprinkle yeast over slowly and combine. Stir in beaten eggs.
Add flour.
Place in greased bowl and let rise in warm place (about 1 1/2 hours).
Punch down.
Knead lightly and form balls.
Let rise on greased cookie sheet.
Brush with butter.
Cover with wax paper until double in size.
Bake at 425\u00b0 for 15 to 20 minutes.
Brush top with a mixture of 2 tablespoons sugar and 1/2 cup warm water.
