Denver Omelette - cooking recipe

Ingredients
    6 strips bacon, diced
    1/2 small onion, chopped
    1/2 small green pepper, chopped/diced
    1 tomato, chopped/diced
    4 eggs, beaten
    1/4 tsp. pepper
    8 Tbsp. shredded cheese
    dash tabasco
    chopped parsley
Preparation
    Heat a 10 - 12 inch skillet and crisp the bacon.
    Add onion and green pepper and cook to soften.
    Mix tomato with eggs, pepper, cheese and tabasco.
    Add to bacon/onion/pepper mix and cook on stove top over medium heat until the bottom is browned and set, (you have to look).
    After bottom is set, place under broiler and cook quickly until browned, done and puffy.
    Yield:
    2 generous servings.
