Baked Rice - cooking recipe

Ingredients
    2 c. uncooked instant rice
    3 eggs
    1 c. sugar
    1/4 tsp. salt
    1/4 tsp. vanilla
    3 c. milk
    2 Tbsp. cinnamon-sugar mixture
Preparation
    Preheat oven to 350\u00b0.
    Cook rice according to package instructions.
    In large ovenproof dish, beat eggs.
    Whisk in vanilla, salt, sugar and milk.
    Add cooked rice.
    Place dish in larger ovenproof pan filled with 2 inches water.
    Bake 30 minutes. Sprinkle cinnamon-sugar mixture over rice.
    Bake 30 more minutes or until a knife inserted in center comes out clean.
    Top with whipped cream, optional.
