Favorite Family Chili(Serve With Quick Pita Nachos) - cooking recipe

Ingredients
    2 to 3 country style pork ribs, all fat and bones removed and cut up into large chunks (about 3/4 lb.)
    1 large onion, chopped
    1 medium green bell pepper, chopped
    2 jalapeno peppers, chopped fine
    2 to 3 cloves garlic, minced
    1 (16 oz.) can tomatoes, crushed with juice
    1 c. water and 1 beef bouillon cube or 1 c. beef broth
    1 Tbsp. tomato paste
    1/4 c. bulgur
    1 bay leaf
    1 Tbsp. chili powder
    1 Tbsp. ground cumin
    1 tsp. ground coriander
    1 tsp. red pepper flakes or to taste
    1 tsp. dried oregano
    1 tsp. dried basil
    1 tsp. dried cilantro
    1 (16 oz.) can red kidney beans, drained (reserve liquid)
    10 oz. fresh mushrooms, washed and cut into quarters
Preparation
    Prepare the pork; chop all the vegetables.
    Spray a large Dutch oven with cooking spray; saute the pork cubes until no longer pink.
    Add the chopped vegetables (not the mushrooms); saute about 3 minutes.
    Add the canned tomatoes and the next 11 ingredients; simmer for 10 to 15 minutes.
    Taste and adjust seasonings to your taste.
    Add some reserved bean liquid or more tomato paste to thicken slightly, if needed.
    Add the kidney beans and mushrooms; cook about 10 minutes longer to heat through and blend flavors.
    Serve over a bed of rice.
    Serves 4.
