Cottage Potatoes - cooking recipe

Ingredients
    10 large potatoes (with skins)
    1 green pepper, diced
    1 pimento, diced
    1 onion, diced
    4 slices bread, cubed
    1/2 lb. Velveeta cheese, cubed
    parsley flakes
    salt
    3/4 c. warm milk
    1/2 c. butter, melted
    cracker crumbs
Preparation
    Boil potatoes with skins. When cool, peel and cut into good size pieces.
    Add pepper, pimento, onion, bread (cubed) and cheese (cubed). Add salt, pepper and parsley to taste and mix together. Place mixture in baking dish or casserole dish.
    Pour warm milk and melted butter over it.
    Sprinkle with cracker crumbs over top. Bake 45 minutes at 350\u00b0.
