Red Cabbage - cooking recipe
Ingredients

1 head red cabbage (about 3 lb.)
2 Tbsp. sugar
3 Tbsp. butter or margarine
wine vinegar
salt and pepper
1 chopped apple (tart, like Granny Smith; optional)
1 tsp. caraway seed (optional)
Preparation

Trim cabbage and chop or shred.
Wash well and drain.
Melt butter in large pot and add sugar.
Fry until golden brown. Quickly throw in cabbage (stand back because it may splatter a little).
Toss cabbage.
Add 2 tablespoons vinegar, caraway seed, apple, salt and pepper to taste and just enough water to prevent burning.
Simmer slowly, adding a little more water if necessary. Adjust seasonings; cabbage should have a sweet-sour flavor; add more sugar and/or vinegar to suit.
Simmer for approximately 30 to 40 minutes to allow flavors to blend.
This dish improves greatly with each reheating.
