Ingredients

2 c. plus 2 Tbsp. all-purpose flour
1 c. granulated sugar
1 tsp. baking powder
1/8 tsp. salt
3/4 c. chilled butter or margarine, cut in small pieces
1 egg
2 Tbsp. rum or lemon juice
1 tsp. grated lemon peel
2 lb. prune plums, cut in wedges
1 tsp. ground cinnamon
whipped cream (optional)
Preparation

Crust:
Mix 2 cups flour, 1/4 cups sugar, baking powder and salt in a medium bowl.
Cut in butter until particles resemble coarse crumbs.
Beat egg with rum and lemon peel.
Add to flour mixture.
Mix quickly with fingers to form a smooth dough.
Press dough in bottom and 1-inch up sides of 9-inch spring-form pan (dough should be at least 3/8-inch thick around sides).
Flute edge, if desired.
