Eggplant Stuffing Bake - cooking recipe

Ingredients
    1 medium eggplant (unpeeled), diced
    2 Tbsp. oil
    1 large onion, chopped
    1 green pepper, chopped
    1 clove garlic, pressed
    2 slices whole wheat bread, buttered and cubed
    3 eggs, beaten
    1/2 tsp. each: salt, black pepper, dried thyme and marjoram leaves
    1 c. grated cheese (Parmesan, Monterey Jack or sharp Cheddar)
Preparation
    Steam eggplant or boil in salted water for 5 minutes.
    Saute onion and green pepper.
    Add garlic, eggplant, bread cubes, eggs and seasoning.
    Saute for 2 minutes more.
    Spoon into a buttered 1-quart baking dish.
    Cover with grated cheese.
    Bake at 350\u00b0 for 20 to 25 minutes or until lightly browned.
    Serve hot or at room temperature.
