Turkey Ham And Wild Rice Salad - cooking recipe
Ingredients

1 1/2 lb. cubed turkey ham
1 (6 oz.) pkg. wild rice mix, prepared
2 medium avocados
2 Tbsp. lemon juice
2 fresh tomatoes
1/4 c. sliced green onions
1/3 c. red wine vinegar
1/2 c. olive oil
fresh ground pepper to taste
2 c. finely cut fresh spinach, stems removed
fresh spinach leaves (as needed)
2 Tbsp. finely chopped fresh parsley
Preparation

Combine turkey ham and cooled rice mixture in a large bowl. Peel and cube avocados and sprinkle with lemon juice.
Remove seeds from tomatoes and dice.
Mix avocados, tomatoes and green onion with turkey ham and rice.
Combine vinegar, oil and pepper; pour over salad.
Mix lightly and chill.
