Mom'S Spinach Cheese Bake - cooking recipe

1 Tbsp. butter or margarine
2 eggs
3/4 c. skim milk
1/4 c. all-purpose flour
1/2 tsp. double-acting baking powder
1/4 tsp. salt
1/8 tsp. nutmeg
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
2 c. (1/2 lb.) shredded Monterey Jack cheese
Preparation

Preheat oven to 350\u00b0.
Place butter or margarine in an 8-inch square baking dish and set in oven just long enough for butter to melt, about 2 minutes.
Tilt dish to coat bottom and sides with melted butter; set aside.
