Gorditas - cooking recipe

Ingredients
    3 to 4 c. yellow corn meal
    1/2 c. flour
    Cheddar or Mozzarella cheese, in chunks
    boiling water
    oil for frying
    1 or 2 cans Ro-Tel or salsa picante sauce
Preparation
    Add flour to corn meal in a large bowl.
    Add boiling water to dry ingredients (enough to form a stiff dough).
    Shape dough around small chunks of cheese.
    Shape like a biscuit.
    Drop in hot grease; cook until firm or lightly brown.
    Cool slightly. Slit open and add sauce.
