East Indies Salad - cooking recipe

Ingredients
    1 1/2 c. Minute rice
    1 (10 oz.) pkg. frozen peas
    1 1/2 c. mayonnaise
    2 tsp. lemon juice
    1 1/2 tsp. curry powder
    1 1/2 tsp. grated onion
    2 c. tiny cooked shrimp
    1 c. sliced celery
Preparation
    Prepare rice as directed on package, omitting butter.
    Add frozen peas and stir until peas are thawed.
    About 1 hour before serving, combine mayonnaise, lemon juice, curry powder and onion. Mix well.
    Measure 1/2 cup and set aside.
    Add shrimp and celery to remaining dressing.
    Then add the rice and mix lightly with a fork.
    Chill.
    Serve with reserved dressing on salad greens with tomato wedges.
    Serves 4 to 5.
