Potato-Cheese Soup - cooking recipe

Ingredients
    2 Tbsp. margarine
    1/2 c. chopped onion
    1/2 c. chopped celery
    1 tsp. salt
    1 Tbsp. flour
    dash of pepper
    1 c. water
    2 c. mashed potatoes
    2 1/2 c. milk
    1/2 to 3/4 c. grated cheese
Preparation
    Saute onion and celery.
    Add flour, salt and pepper and stir. Mix in 1 cup of water, stirring constantly for 2 minutes (boil is okay), then add potatoes, milk and cheese.
    Heat slowly until cheese melts; do not boil.
    Garnish with parsley or croutons. Great way to use leftover mashed potatoes.
