Quesadilla Grandia - cooking recipe

Ingredients
    2 large flour tortillas
    1 1/2 c. Co-Jack cheese, shredded
    1/2 c. diced tomatoes
    1/4 c. chopped green onions
    4 small jalapeno peppers, chopped
    butter
    salt
Preparation
    Lightly spread butter on one tortilla. Add grated cheese to cover tortilla. Sprinkle on tomatoes, green onions and jalapeno peppers evenly. Cover with another tortilla and press edges together. Place on plate, cover with a paper towel and microwave for 1 minute on high. Remove paper towel, cut across, like a pizza. Separate pieces. Serve warm with a scoop of salsa, guacamole and sour cream on a bed of lettuce.
