Ingredients

6 c. water
9 c. cubed 3/4-inch rind, peeled
4 c. sugar
1 c. white vinegar
1/4 tsp. oil of cinnamon
1/4 tsp. oil of cloves
Preparation

First Day:
Heat water to boil in a large pot.
Add rind and simmer until tender (10 to 15 minutes).
Drain.
Combine remaining ingredients in saucepan.
Heat to boil.
Pour over rind.
Cool, cover and let stand overnight.
