Roast Beets With Orange Juice - cooking recipe

Ingredients
    4 large beets, scrubbed and trimmed
    juice of 1 orange
    2 tsp. chopped fresh thyme
    salt and pepper
Preparation
    Heat oven to 375\u00b0.
    Tear off 4 sheets of aluminum foil large enough to cover each of the beets.
    Place each beet on a piece of foil and turn up the sides to hold the liquid.
    Pour 2 tablespoons orange juice on each beet and sprinkle with thyme.
    Tightly enclose beets in the foil and set in a baking dish.
    Put in oven and bake 1 to 1 1/2 hours until tender.
    Serve at once.
    Great with broiled fish.
