Ingredients

3 egg yolks
pinch of salt
2 1/2 c. milk
3/4 c. sugar
1/2 c. flour
1 tsp. vanilla
1 c. coconut
1 (9-inch) baked pie crust
Preparation

Combine egg yolks, salt and milk; stir over medium heat until warm.
Combine sugar and flour, mixing well.
Gradually add to milk mixture, stirring constantly.
Cook until thickened and remove from heat.
Stir in vanilla and coconut; remove from heat and pour into pie shell.
Top with meringue.
Sprinkle with coconut and bake until brown.
