Ricotta Puffs - cooking recipe

Ingredients
    1 c. flour
    1 tsp. baking powder
    2 Tbsp. granular sugar
    1 Tbsp. vanilla
    2 eggs
    1 lb. Ricotta cheese
    2 1/2 c. vegetable oil
    powdered sugar
Preparation
    Heat oil in saucepan to 375\u00b0.
    Mix all other ingredients, except powdered sugar.
    Carefully add tablespoons of mixture to hot oil.
    Within minutes, balls will turn into puffs and turn golden brown.
    Drain on paper towels and sprinkle with powdered sugar.
    Makes about 2 dozen.
