Shrimp Scampi - cooking recipe

Ingredients
    3 lb. jumbo shrimp
    1/3 c. butter
    2 to 3 cloves garlic, crushed
    1/4 c. olive oil
    1/4 c. minced parsley
    1/4 c. cooking sherry
    salt and pepper
Preparation
    Devein and shell shrimp.
    Pat dry.
    Heat oil in large skillet. Add shrimp and cook 3 minutes over medium heat, stirring frequently.
    Sprinkle with salt and pepper.
    Add butter, garlic, sherry and parsley.
    Cook 4 minutes longer, stirring constantly. (May add a bottle of clam juice if more broth is desired.)
    Serve with rice or crusty Italian bread to soak up broth.
    Serves 4 to 6.
