Grits Souffle - cooking recipe
Ingredients

4 c. chicken stock or broth
1 c. quick grits (not instant)
1/2 tsp. salt
4 eggs, separated
Preparation

Preheat oven to 350\u00b0. Generously grease a 2 quart baking dish. Bring the stock to a boil in a saucepan and slowly stir in grits. Add salt, return to a boil and simmer for 5 minutes. Remove from heat, cover and let stand. Meanwhile, beat the egg yolks until light yellow. Whisk the egg whites until stiff peaks form. Combine yolks with grits, then fold in whites. Pour in baking dish and bake for 20 to 25 minutes, until puffy and light golden. Serve immediately.
