Grilled Vegetable Sandwich - cooking recipe

Ingredients
    6 Tbsp. mayonnaise
    1/2 tsp. chopped fresh parsley
    pinch of dried oregano
    salt
    1 red bell pepper
    1 small zucchini
    1 yellow summer squash
    1/4 eggplant
    1/4 c. olive oil
    2 sourdough French rolls
    1 Tbsp. fresh grated Parmesan cheese
    6 to 8 separated onion ring slices (2 whole slices)
    3 to 4 slices tomato (1 medium tomato)
    2 leaves red leaf lettuce
