Harvest Lasagna(Meatless) - cooking recipe

Ingredients
    9 cooked lasagna noodles
    6 Tbsp. butter or margarine
    3 Tbsp. oil
    1 c. chopped onion
    1 clove garlic, minced
    1 eggplant, cut cube size
    1 zucchini, cut cube size
    2 green peppers, chopped
    6 tomatoes, chopped
    1 1/2 tsp. salt
    1 tsp. basil
    1 tsp. pepper
    6 Tbsp. flour
    3 c. milk
    1 c. grated cheese
Preparation
    Heat 3 tablespoons each of butter and oil in a large frying pan.
    Add onion and garlic; cook until soft.
    Toss in eggplant and brown 5 minutes.
    Add zucchini, peppers, tomatoes, salt, basil and pepper.
    Simmer, covered, 15 minutes, then remove lid and cook over medium heat about 10 minutes.
    Set aside.
