Zucchini Au Gratin - cooking recipe

Ingredients
    8 c. sliced zucchini
    2 Tbsp. margarine
    1 c. minced onion
    2 eggs
    1/2 c. evaporated milk
    1/2 tsp. each: salt, pepper and nutmeg
    3 Tbsp. dried bread crumbs
    1 1/2 oz. Parmesan cheese, grated
Preparation
    Cook zucchini in water (3/4 cup) for 8 to 10 minutes.
    Drain and cool.
    Melt butter; add onion.
    Cook until onion is tender. Add zucchini.
    Pour into 8-inch square baking dish.
    Combine eggs, milk, salt, pepper and nutmeg.
    Pour over zucchini. Combine bread crumbs, cheese and some red pepper for garnish. Sprinkle over zucchini and bake until set, 15 to 18 minutes.
