Potato Crocketts - cooking recipe

Ingredients
    2 c. mashed potatoes
    1 can mushroom soup
    pinch of parsley
    1 egg, slightly beaten
Preparation
    Mix soup, potatoes and parsley.
    Roll mixture into balls. Roll balls in bread crumbs, then dip them into the beaten egg and dip them in bread crumbs again.
    Deep fat fry until golden brown. Serves 4.
