Apple And Oat Bran Muffins - cooking recipe

1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. packed brown sugar
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1 c. buttermilk
2 egg whites
2 Tbsp. cooking oil
3/4 c. shredded, peeled apples
nonstick spray
1/4 tsp. cinnamon
Preparation

In medium bowl, stir flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.
In small bowl, combine buttermilk, egg whites and oil.
Add to dry ingredients and stir just until moistened.
Stir in apple.
Store batter in refrigerator tightly covered for up to 5 days.
Spray muffin pans. Spoon about 1/4 cup batter into each. Bake at 375\u00b0 for 18 to 20 minutes or until done.
