Ingredients

1/4 c. Carolina rice
1 c. water
2/3 c. sugar
1/2 tsp. salt
1 qt. milk
2 eggs
3/4 tsp. cornstarch
1 tsp. vanilla
1/2 c. raisins
Preparation

Boil gently rice, water, sugar and salt until water almost all absorbed.
Add milk, lower heat and gently simmer for 1 to 2 hours or until it is as thick as gravy.
Beat egg, cornstarch and vanilla.
Remove rice from heat.
Slowly stir egg mixture into rice.
Pour into semiflat serving bowl.
Sprinkle with cinnamon. Let set at room temperature 1/2 hour or so, then refrigerate.
Add raisins after egg mixture, if desired.
