Pasta E'Fagiole - cooking recipe
Ingredients

1 c. white pea beans
1 (13 oz.) can chicken broth
salt, pepper and garlic salt to taste
1 1/2 c. pasta shells, elbows, etc.
2 Italian sausages, cut into 1/2-inch coins
1/2 c. Ragu or any tomato sauce
Preparation

Soak the beans overnight in 3 cups water.
Saute sausage; add to bean water.
Cook until beans are soft, but not mushy.
Add seasonings, broth and tomato sauce; simmer just until flavors blend.
This can be made one day in advance.
Before serving, cook pasta and refresh with cold water before adding to bean mixture. If added while hot, pasta will absorb too much of the liquid.
