Hush Puppies - cooking recipe
Ingredients

2 c. white cornmeal
2 tsp. baking powder
1 tsp. salt
6 Tbsp. finely chopped onion
2 c. lard or shortening
1 Tbsp. flour
1 tsp. baking soda
1 egg, beaten
1 tsp. cayenne pepper
1 1/3 c. buttermilk
Preparation

Combine cornmeal, flour, baking powder, baking soda and salt in medium size bowl.
Stir in egg, onion and cayenne pepper.
Add buttermilk; beat well.
Heat lard in heavy frypan until hot, about 375\u00b0.
Drop rounded teaspoonfuls of batter into hot fat.
Fry until golden brown, turning once.
Drain on paper towels.
Wrap hush puppies in heavy foil; place in warm oven (250\u00b0) until ready to serve.
Makes 4 dozen.
